Linus Pauling Won a Nobel Prize — Then Convinced America to Chug Orange Juice Every Winter
The moment a scratchy throat shows up, the routine kicks in almost automatically. You shuffle to the refrigerator, pour a tall glass of orange juice, and feel like you're doing something constructive. It's one of the most familiar sick-day rituals in American households. But ask most people where that habit actually came from, and they'll say something vague about vitamin C being good for your immune system.
The real story involves a Nobel laureate, a deeply contested scientific claim, decades of cherry-picked research, and a juice industry that had every reason to keep the myth alive.
The Man Who Started It All
Linus Pauling was, by any measure, a scientific giant. He won the Nobel Prize in Chemistry in 1954 for his work on chemical bonding — and then a second Nobel, the Peace Prize, in 1962. He was one of the most decorated scientists of the 20th century.
Then, in 1970, he published a book called Vitamin C and the Common Cold. In it, he argued that taking massive doses of vitamin C — far beyond what anyone would get from food or a standard supplement — could prevent and dramatically shorten colds. He wasn't talking about the 65 to 90 milligrams a day the government recommended. He was suggesting doses of 1,000 milligrams or more. Some of his later recommendations climbed even higher.
The book became a bestseller. Pauling had two Nobel Prizes. If he said vitamin C could beat colds, who was going to argue?
A lot of researchers, as it turned out.
What the Science Has Actually Shown
In the decades since Pauling's book, vitamin C and the common cold have been studied extensively. A comprehensive 2013 Cochrane review — one of the most rigorous analyses in medical research — looked at data from 29 trials involving more than 11,000 participants. The findings were considerably less exciting than Pauling had promised.
For the general population, taking regular vitamin C supplements did not meaningfully reduce how often people got colds. It showed a modest effect on duration — roughly 8 percent shorter in adults, which translates to less than a day. Starting vitamin C after cold symptoms appeared showed no benefit at all in most trials.
There were some interesting exceptions. People under extreme physical stress — marathon runners, soldiers doing Arctic training — did show a more significant reduction in cold frequency with regular supplementation. But that finding applies to a narrow group of people in unusual circumstances, not the average American sitting in an office.
The bottom line from most immunologists and nutrition researchers: for healthy adults eating a reasonably varied diet, extra vitamin C is unlikely to do much of anything for a cold you already have.
So Why Does Everyone Still Believe It?
Two forces kept this belief alive: Pauling himself, and the orange juice industry.
Pauling never backed down. Even as researchers failed to replicate his claims, he continued advocating for megadose vitamin C until his death in 1994. His persistence gave the idea a long runway, and because he was legitimately brilliant, his credibility carried the theory well past the point where the evidence supported it.
Meanwhile, the Florida citrus industry and major juice brands had stumbled into a marketing goldmine. Associating orange juice with immune health and cold prevention was enormously profitable. Advertising throughout the 1970s, 80s, and 90s reinforced the vitamin C connection at every opportunity. The message was simple, memorable, and came with the implicit endorsement of a two-time Nobel winner.
Simple messages beat complicated ones every time. "Vitamin C fights colds" is easy to remember. "Vitamin C has a modest effect on cold duration in some populations under specific conditions" is not something that fits on a grocery store display.
What About the Vitamin C in Orange Juice Specifically?
Here's another layer worth understanding. A standard 8-ounce glass of orange juice contains roughly 60 to 120 milligrams of vitamin C, depending on the brand and whether it's from concentrate. That's around the daily recommended intake for adults — which is genuinely useful if someone is actually deficient.
But most Americans aren't deficient in vitamin C. It's found in a wide range of foods, including bell peppers, strawberries, broccoli, and tomatoes — not just citrus. And the doses Pauling was advocating were 10 to 20 times what a glass of juice provides. So even on Pauling's own terms, the orange juice habit was never really the thing he was recommending.
What orange juice does contain is a significant amount of sugar — around 20 to 25 grams per cup, comparable to several cookies. For people managing blood sugar, that's worth knowing.
What Might Actually Help
If vitamin C megadosing doesn't hold up, what does? The honest answer is that preventing colds is mostly about hygiene and sleep. Handwashing remains the single most effective tool for reducing transmission. Chronic sleep deprivation genuinely suppresses immune function — studies have shown that people sleeping fewer than six hours a night are significantly more likely to catch a cold when exposed to the virus than those sleeping seven or more hours.
Zinc lozenges, taken within 24 hours of symptom onset, have shown some evidence of reducing cold duration, though the research is inconsistent. Staying well-hydrated helps with symptom management. And there's no shame in a warm bowl of soup — the steam and warmth offer real, if modest, relief.
The Takeaway
Orange juice isn't bad for you. But the belief that it's a medical intervention for colds came from a Nobel laureate's controversial theory, got amplified by a juice industry with obvious financial incentives, and was never really supported by the full body of research. If you enjoy a glass when you're sick, go ahead — just don't count on it to do the heavy lifting. Your immune system has its own plans, and they don't require a trip to the refrigerator.
